The cheese in Pipers cheddar and onion crisps is supplied by Lye Cross Farm situated at the foot of the Mendip Hills near the village of Cheddar. Here John Alvis and family produce their cheese using the traditional process known `Cheddaring'. This practise of turning and stacking the curds until mature and full of flavour is still in full operation at Lye Cross and helps give the cheese it's distinct flavour.
